L Turn dough out onto a lightly ﬂoured work surface and knead for Yield: 12 rolls 1 packet (2¼ teaspoons [9 g]) active dry yeast ¼ cup (60 ml) warm water (100 to 110°F [37 to 43°C]) 2 tablespoons (40 g) honey 3¼ to 3½ cups (325 to 350 g) freshly milled, sifted einkorn ﬂour ¾ teaspoon sea salt ½ cup (120 ml) warm milk 3 tablespoons (42 g) butter, melted, divided, plus more for brushing 5 minutes. Form dough into a ball; place inside a greased bowl in a warm place for 1 to 2 hours, until puffed and risen.
Stir in chopped bell pepper, chopped onion, chopped mushrooms, and chopped tomatoes, and sauté until soft and translucent, but not browned, about 8 to 10 minutes.
